Plant-Based Thanksgiving: Simple Recipes Filled with Gratitude (and Flavor)

1. Lentil Loaf with Maple Glaze

A cozy, hearty alternative to turkey that’s packed with protein and comfort.

You’ll need:

• 2 cups cooked lentils
• 1 cup breadcrumbs (or oats)
• 1 cup chopped onion
• 2 garlic cloves, minced
• 2 tbsp soy sauce or tamari
• 2 tbsp tomato paste
• 1 tbsp olive oil
• Salt, pepper, and herbs (like thyme or rosemary)

Maple glaze: 2 tbsp ketchup + 1 tbsp maple syrup + 1 tsp mustard

To make:
Mix all ingredients, press into a loaf pan, and bake at 375°F (190°C) for 30–35 minutes. Brush the glaze on top halfway through. Slice, serve, and watch it disappear.

2. Creamy Dairy-Free Mashed Potatoes

Comfort food, the kind way.

You’ll need:

• 4–5 medium potatoes, peeled and boiled
• ½ cup oat milk or almond milk
• 2 tbsp olive oil or vegan butter
• Salt and black pepper to taste

Mash until fluffy and creamy. For extra flavor, mix in roasted garlic or a drizzle of olive oil infused with rosemary.

3. Autumn Harvest Salad

Colorful, fresh, and full of texture.

You’ll need:

• Mixed greens (spinach, arugula, kale)
• Roasted sweet potatoes or squash cubes
• Cranberries or pomegranate seeds
• Walnuts or pecans
• Balsamic vinaigrette

Toss everything together and top with a sprinkle of hemp or chia seeds for an omega boost.

4. Pumpkin Pie with Coconut Whip

No Thanksgiving table is complete without it.

You’ll need:

• 1 vegan pie crust
• 1 can pumpkin purée
• ½ cup coconut milk
• ¼ cup maple syrup
• 2 tbsp cornstarch
• 1 tsp cinnamon, ½ tsp nutmeg, pinch of salt

Blend, pour into crust, and bake at 350°F (175°C) for 40–45 minutes. Chill before serving with whipped coconut cream.
